Surprise Sunday Sunrise Sustenance
Last Saturday, we were at our butcher shop buying meat for the week. We don't get there often, but when we do it's a treat! Among other things, they have the most ridiculous bacon that you could imagine. We picked up a bit without really having a plan of how to use it. So I decided that I was going to make breakfast the next day.
Our breakfasts are generally unexciting (cereal, granola bars, etc.) and Melissa cooks every other meal almost by herself, so I thought it would be nice to give her a hot meal for a change. We had eggs and bread, so I searched around and found a french toast recipe that looked good. I baked the bacon, soaked some mixed nuts in maple syrup and defrosted some frozen berries. I didn't think to get wipped cream and I didn't let the bread soak in the egg mixture quite long enough, but it was still a pretty darn good meal.
So that's when I decided that Sundays would be my day to cook breakfast. Melissa gets no input and doesn't know what we're having until I'm cooking it. In fact, she was very confused (and maybe a little nervous) when she saw me bring home swiss chard apricot pie filling yesterday morning.
Today's menu had a sausage, greens and scrambled eggs dish (no, the name had nothing to do with my decision) and a fruit salad. Melissa's parents spent the night with us since Melissa wasn't feeling well and I had my grandma's 99th birthday to celebrate (more on that on her actual birthday). Her mom helped with the cooking, her dad with the cleaning and I think we all enjoyed the meal.
I'm especially enjoying this cooking thing. Breakfast is my favorite meal, yet probably the one that we spend the least amount of time on because we usually don't have the time or the energy in the morning. So we'll see how long my enthusiasm lasts.
Does anyone have any favorite breakfast dishes they would recommend?
